Here’s the thing about the holiday season: it feels nearly impossible to stay healthy! There are countless treats in the office kitchen, parties on more nights than just the advent, and decadent food and drinks at every turn!
Enjoy every bite at those holiday parties – but in turn, make sure you keep to a health regime on days and nights when you don’t have a full social calendar. You can keep yummy Clementine’s at your desk to try and fight those office candy temptations, and eat healthfully and work out when you can. Here’s a fiber + protein + veggie packed ‘weeknight meal’ we love, not only because it’s super yummy, but it helps make up for more ‘decadent’ nights!
Protein and Veggie Bowl:
1 bunch spinach, washed
3-4 white mushrooms, rinsed and sliced
1 white onion, finely choppee
1 cup brown rice – cooked in chicken or vegetable stock
salt and pepper to taste
2 Tbs Coconut oil, separated
1 Tbs finely chopped garlic
1 Tbs Olive Oil
Directions: Set aside cooked rice. Sautée in 1 Tbs coconut oil over medium heat: Chopped onion for a couple minutes until clear, then add mushrooms. Once thourughly cooked (about 2 more minutes) add to rice mixture. In the same pan over low heat , pour 1 tablespoon olive oil and stir garlic in until slightly brown, then stir in spinach – it will wilt quickly so keep an eye out! Once wilted, remove from heat. In a frying pan over low heat, use remaining tablespoon of coconut oil. Crack egg once pan is hot and cook until white is done but yoke is runny.
Into a large bowl, fill half with spinach, and half with brown rice mixture. Slide egg over top. Crack over top some sea salt and fresh black pepper.
