Thirsty Thursday: Frozen Mojitos

I really can’t even begin to talk about this cocktail. My mouth is watering as I type this… I know Adriane and I are often a bit dramatic in our enthusiasm BUT our newly-created frozen mojito recipe is EVERYTHING.

If you missed it last week in our Self Magazine column The Weekender, I wanted to make sure you found it HERE.

So first of all I must say if you don’t have a Magic Bullet or NutriBullet– go out and get one. I got one several months ago and it has changed my life. Not only does it make incredible (and healthy) smoothies but it can also be used for…COCKTAILS. This frozen mojito was so quick to whip up with the NutriBullet I can’t believe we didn’t start using this before!

Frozen Mojito 3 (1)

1/4 cup of agave nectar

6 tablespoons fresh lime juice (4-5 juicy limes), plus an extra lime for garnish

12-14 mint leaves plus extra sprigs for garnish

4 ounces chilled white rum (1/2 cup)

2 cups of ice

Combine agave nectar with lime juice and mint in a blender. Pulse several times to combine. Add ice and rum and pulse until ice is finely crushed and mint is chopped finely.

Pour into two glasses and garnish with mint sprigs and wedges of lime.

Makes: Two Mojitos

Frozen Mojito 2

Now I am going to run home and make a couple of these bad boys. The perfect drink for a hot (and ridiculously humid) summer night!
