A Skinny Gimlet – AK’s Birthday Cocktail

Gimlets, when done right – are just about the most delicious cocktail on the planet in my opinion! They are just the right amount of sweet and have the citrus-y tart taste that makes your mouth so happy.

The traditional recipe for a gimlet is as follows:

  • 2 oz. gin or vodka
  • 1 oz. Rose’s Lime juice (or 1/2 oz. simple syrup and 1/2 oz lime juice)
  • Garnish with a lime

Us being the skinny-cocktail enthusiasts that we are, I wanted to create a version of the gimlet that is lower in calories and sugar, but just as delicious!

I looked up some great ‘lime simple syrup’ recipes online and I modified my favorite so that I could use half Splenda and half sugar. It was a really fun and really easy project and I’m so happy with the tasty results! Recipe below, and photos after that. Be sure to watch the video for our SUPER SIMPLE SKINNY GIMLET tips!

‘Skinny Lime Simple Syrup’ Recipe:

– Wash limes and once they are dry, zest 2 of them. With a sharp knife I peeled off a few peels – they just look so pretty!

– Juice limes and add lime zest and peels to juice.

– Over medium heat in a small sauce pan, stir water, lime juice mixture, and the sugar/Splenda mixture until sugar and Splenda have dissolved, about 3 minutes. Make sure to stir constantly.

– Remove from heat and let cool. Stir in airtight container in fridge. Strain peels and zest from mixture before using. This will last up to 3 days.

**An extra step we took to make our Gimlets skinny was to add a splash of delicious club soda which is calorie free and adds a nice bubbly texture to the drink!**

Here’s our final ‘Skinny Gimmy’ recipe:

  • 2 oz. vodka
  • 1 oz. Home Made Lime Simple Syrup
  • Spash of club soda
  • Garnish with a lime
