Falling for Pumpkin

Dare we compare one of our favorite seasonal ingredients – Pumpkin –  to the (in)famous Snooki? DARE WE?

So both are orange…  that’s a given. And both; well, you either love ’em or you hate ’em. How many people have you talked to who are just ‘lukewarm’ on the subject of pumpkin pie? Or Snooki for that matter?

I happen to love pumpkin! I love all things pumpkin. Yet another reason to get excited for fall. There are so many things you can do with this great ingredient.

If you are like me and a fan pumpkin – try this tomorrow morning. Add some canned pumpkin to your oatmeal or yougurt.  That, with some cruchy walnuts, brown sugar, and a dash of cinnamon, adds incredible flavor (tastes like pie or pumpkin bread!) and also gives you the benefits of:

  • Alpha-carotene
  • Beta-carotene
  • Fiber
  • Vitamins C and E
  • Potassium
  • Magnesium

Wow! The entire cast of the Jersey Shore can’t boast all that in a single serving!
